(nonfat) blueberry sprite muffins - it's science


just so we're clear on everyone's expectations here... disclaimer: these are nonfat and vegan so obviously they will not measure up to muffins that use lots of delicious, unhealthy ingredients. for our lifestyle, these hit the spot!

blueberry sprite muffins
yield 12
ingredients
2 cups flour (i used wheat)
1/2 cup sugar (i eyeball this so sometimes it's more like 1/3 c)
1/2 tsp salt
2 tsp baking powder
1 tsp cinnamon 
1 tsp vanilla
1 can sprite
1 or 1/2 container of blueberries

directions
preheat oven to 400 degrees. prep pan with cups (foil cups work best). mix dry ingredients. mix in wet ingredients. fold in blueberries. fill cups, i work quickly once the sprite is in so my chemical reaction with the sprite and baking powder doesn't go flat. sprinkle tops with sugar. bake for 20 minutes. serve warm!

alterations
>for banana sprite muffins i subbed 2 mashed bananas for the blueberries and used 1/2 less flour.
>for chocolate chip sprite muffins i used brown sugar instead of white and skipped the cinnamon. the sprite after taste is more noticeable in these so i want to experiment with using seltzer water to see if that will be a flavorless version of the sprite. i would probably need to up the sugar if i used just seltzer also.
>i also made just straight up muffin tops by putting parchment paper on a cookie sheet and dropping spoonfuls on like runny cookie dough. i also baked them at 400 degrees but took them out at 10 minutes.


p.s. can't mention muffin tops without thinking of this seinfeld clip annnd this 30 rock song.

Awesome!! Thanks for the recipe. It looks way yummy. And the Seinfeld muffin top episode is one of my favorites too!
