this week we had sweet potato and pinto bean burritos for dinner. we had half of a sweet potato left over so i decided to try out this biscuit recipe i saw on pinterest. i made a few substitutions (like wheat flour and applesauce), so you can check out the original recipe here. we liked em. they were definitely best straight from the oven!
makes 8 servings
ingredients:
1 cup whole wheat flour
1 tbsp baking powder
2 heaping tbsp unsweetened applesauce
1 tsp agave nectar (or honey or maple syrup)
3/4 cup mashed sweet potatoes, cooled
1/4 cup unsweetened almond milk
directions:
1 cup whole wheat flour

1. preheat oven to 400 degrees.
2. sift together the flour and baking powder in a mixing bowl. mix in the applesauce until well incorporated.
3. add the agave nectar, sweet potatoes, and almond milk and combine, forming a soft dough.
4. roll the dough out on a floured work surface to ½“ thickness. cut out biscuits of desired size. (or just form them in your hand like hamburgers like i did.)
5. bake on baking sheet lined with parchment paper for 12 to 15 minutes.

**notes: you probably don't really need the teaspoon of agave/sweetener since the applesauce sweetens it. i left the skin on my sweet potatoes, but you might prefer to take it off. po-tay-toe, po-tah-toe.

I want more sweet potato recipes. I love them, but always only bake them as "fries".
