...freya cooked something other than dessert.
hard to believe, i know.
i spent my veterans day bringing out my domestic side. i think i went outside three times yesterday, for less than five minutes total, which is a real shame because it was such a nice day out. i cooked, i cleaned, i did laundry, i even watched ellen and oprah!
i planned a cooking day for yesterday because my boss gave me a crock pot taco soup recipe that i really wanted to try, but i'm silly and like to be home when the crock pot's a-brewin. the soup was so easy and good, i highly recommend it.

while my soup was doing its thing in the crock pot, i made emily's recipe for chicken enchiladas. they freeze really well, so instead of eating them yesterday i just wrapped them up in two serving portions and stashed them in the freezer. my first ever freezer meal adventure! i am sooo excited to come home from work and just pop those suckers in the oven for an easy dinner. {if you want the enchilada recipe and a couple other good freezer recipes go to emily's blog archive herrre.}
i was on such a roll freezing stuff, that i even froze the leftovers from the soup so we can have one more easy meal one of these days. i may need to start making this a sunday tradition so we can have some good eats during the week (but we'll need to clean out our freezer first. if only we had a stand alone!)
my sister in law in jax does a freezer meal exchange with a group of gals she knows, and i definitely think we should get something like that going here, who's with me? (and p.s. katie will you p p please give me all those awesome recipes you get from that exchange? kthanks)
my last domestic feat of the day was whipping up some pumpkin spice muffins for dessert. i got the recipe from lindy's craft blog here. and when she says they're easy peasy, she ain't lyin. i added some chocolate chips to em, and they sure hit the spot. baby james couldn't stop asking for more!
all cooking aside, yesterday wasn't just a day for me to housework my brains out.

Wow, that picture really does speak volumes doesnt it? Our nation as a whole could stand to do a lot less whining and a lot more thanking if you ask me. :0)
